Gas vs. Electric Stove: Which Is Right for Your Kitchen?
Ask a chef and they’ll say gas. Ask an engineer and they’ll say induction. Ask an electrician what it costs to run a new 240V line and you’ll get the answer that actually decides it for most people.
Here’s the honest comparison, and then the practical rule that resolves it in about ten seconds.
Start here: what hookup do you already have?
Go look behind your current range. You’ll find one of three things:
- A gas shutoff valve and a flexible gas line (plus a standard 120V outlet). You have gas.
- A large three- or four-prong 240V outlet. You have electric.
- Both. Lucky. You genuinely get to choose.
This matters because converting from one to the other costs more than the running-cost difference will ever save you. Running a new gas line runs several hundred to over a thousand dollars depending on the distance from the meter. Installing a dedicated 240V circuit for an electric range is a comparable job, and if your panel is full, add the cost of a panel upgrade on top.
So: buy the fuel you already have unless you have a specific, strong reason not to. That single rule settles this question for the large majority of Houston kitchens.

The case for gas
You see the flame, so you see the heat. Turn it down and the heat is down now, not thirty seconds from now. That responsiveness is why gas is the default in professional kitchens and why cooks who work by feel prefer it. It handles a wok, it chars a pepper, it sears hard.
It’s also generally cheaper to run in Texas, where natural gas is inexpensive, and it will still cook when the power goes out, a real consideration during Houston’s storm season, though the oven and the electric igniter won’t work.
The downsides: cleaning around grates and burner caps is genuinely tedious, gas ovens bake slightly less evenly than electric, and gas combustion releases byproducts into your kitchen, which is why a properly vented range hood matters more with gas than with anything else.
The case for electric
A smooth-top electric range is easier to live with than a gas range in almost every non-cooking respect. The cooktop is a flat piece of glass, you wipe it. The oven bakes more evenly with drier heat, which is why serious bakers often prefer electric ovens even when they cook on gas. It costs less up front. And installation is simple if the 240V outlet is already there.
What you give up is control. A coil or radiant electric element takes time to heat and, worse, time to cool. Turn the dial down on a boiling pot and it keeps boiling. That’s the entire complaint, and it’s a fair one.
The induction question
Induction is electric, but it isn’t a hot element at all. A magnetic field heats the pan directly, so the cooktop itself stays relatively cool. The result: it boils water faster than gas, it holds a low simmer better than gas, it’s the most precise of the three, and it wipes clean because spills don’t bake on.
Three real catches:
- Your cookware has to be magnetic. Cast iron and most stainless work; aluminum, copper, and glass don’t. Stick a magnet to the bottom of your pans. If it holds, you’re fine.
- It costs more up front, and it needs the same 240V circuit as any electric range.
- The electronics are the failure point. An induction cooktop has more to break than a gas burner, and repairs cost more.
If you’re on electric already and shopping in the higher tier, induction is the genuine upgrade. If you’re on gas and cook happily, it is not worth rewiring for.

Set against that, the running-cost gap between gas and electric for a typical household is a few dollars a month. The payback period on a conversion measured in decades is not a payback at all. Convert only if you’re already renovating and the walls are open.

If you’re a tenant, you don’t get to choose the fuel, you get to choose the range that fits the hookup. If you’re a landlord, electric is usually the lower-liability, lower-maintenance choice, and a smooth top survives tenant turnover better than a gas range with removable grates and burner caps that go missing. - You have a gas line: buy gas. You’ll get better control and lower running costs, and you paid nothing to install it.
- You have a 240V outlet: buy electric. If your budget stretches and your pans are magnetic, buy induction and enjoy the best of both worlds.
- You have both: pick by how you cook. Wok, sear, char, and cook by eye → gas. Bake, simmer, and want a cooktop you can wipe in five seconds → electric or induction.
- You’re about to spend $1,500 rewiring for a stove: don’t. Buy the better range in the fuel you already have and put the difference toward a proper range hood.

Are gas stoves bad for indoor air quality?
